Slow cooked pork & feijoas

Ingredients

  • 2 kg. pork roast
  • 1½ cups feijoas
  • 1 large onion
  • 4 cloves garlic
  • 1½ cups ginger ale
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. honey
  • 2 stalks thyme
  • ½ Tsp. Chinese five spice
  • ½ Tsp. cinnamon
  • Salt & black pepper to taste

Method

  1. Season the pork and sear it in a fry pan with a little oil
  2. Put the pork into a slow cooker (or casserole dish if you choose to cook in the oven) along with chopped onion and chopped feijoas
  3. Deglaze the fry pan with ginger ale and then add remaining ingredients
  4. Pour over the pork in the slow cooker and cook for 8 hours on low or 4 hours on high
  5. Remove slow cooker lid for last 20 minutes to allow the sauce to reduce a little
