Feijoa & Lemongrass Bubble Tea
Ingredients
- Sugar stock
- 150g Castor Sugar
- 150g Brown Sugar
- 300g Water for pearls
- 100g Boba Tapioca pearls
- 700g Water
- 500g Water for tea
- 5g Green Tea
- 50g Lemon juice
- 250g diced Feijoa
- 1bulb Lemongrass
- 300g to 400g Sugar stock
Method
- Boil sugar stock for 5min, set aside to cool
- Cook pearls for approx. 30min, flush in cold water
- Leave pearls in a container covered with sugar stock
- Bring tea water to a boil, add tea, lemon juice, feijoa and crush lemongrass before adding.
- Leave to infuse for a couple of hours in fridge, or over night
- Add sugar stock to tea, taste and strain it
- Whisk it so it gets bubbles on top when serving
- Add sliced feijoa, boba tapioca pearls and ice
