Feijoa & Lemongrass Bubble Tea

Ingredients

  • Sugar stock
  • 150g Castor Sugar
  • 150g Brown Sugar
  • 300g Water for pearls
  • 100g Boba Tapioca pearls
  • 700g Water
  • 500g Water for tea
  • 5g Green Tea
  • 50g Lemon juice
  • 250g diced Feijoa
  • 1bulb Lemongrass
  • 300g to 400g Sugar stock

Method

  1. Boil sugar stock for 5min, set aside to cool
  2. Cook pearls for approx. 30min, flush in cold water
  3. Leave pearls in a container covered with sugar stock
  4. Bring tea water to a boil, add tea, lemon juice, feijoa and crush lemongrass before adding.
  5. Leave to infuse for a couple of hours in fridge, or over night
  6. Add sugar stock to tea, taste and strain it
  7. Whisk it so it gets bubbles on top when serving
  8. Add sliced feijoa, boba tapioca pearls and ice
