Feijoa & Boysenberry Jelly

Ingredients

  • 1.5 kg feijoas
  • 3 cups boysenberries
  • 2 large lemons (juice)
  • 4-5 cups sugar
  • 5 cups water

Method

  1. Bring to boil cover and boil 15 mins.
  2. Add boysenberries. Bring back to the boil and cook until soft.
  3. Strain in bag overnight.
  4. Measure juice and allow 1 cup sugar to 1 cup juice.
  5. Heat to boiling point before adding sugar.
  6. Boil rapidly until setting point reached.
